why does Sumatra changes readings format when changing value UseFixedPageUI = false to true. I would like to have the possibility of text selection through this option. How can i get this fixed?

The FixedPageUI=true is needed for zooming, or selection of fixed text and search. It is the default one in current pre-release as the old legacy eBook reflowing (not fixed for zoom or selection) mode is retiring and currently only used for fall-back when fixedUI can’t draw the text.
