Problem converting pdf to epub

I scanned a book, page by page, when I converted to epub, so I can read it on my Kobo e-reader the quality is not there, and if I try to read it with Sumatra, it shows the book as a double page, wonder what to do, thanks for your help,

If you are reading epub files in its default mode there will be facing pages
In the top left menu change to view > single page

what can I do to get a better conversion quality as a epub,
and why when I load them in the Kobo e-reader the reader does not adjust to the font size enlargement, thanks,
