Please add file type association for individual file types during Windows install.
Currently it only offers it in menu, but only for pdf.
I have a commercial pdf reader so I don’t want to use it for that.
But I have sumatra for the other file types, which are not offered.

I think the associations are installed, However I think windows 10 security does not like silent alterations so that function may only be useful on earlier versions.
What you should notice after installation is that if you select for example an Amazon AZW file then Open With should have SumatraPDF as the freshest registered handler app.
Kinda true, but when you install eg WinZip you can still open .zip files.
I think win10 only hates modifying complex types like http procol handlers, maybe .html
