I didn’t find it in settings.
I just don’t want the e-mail program to open after (accidental) clicking on the address, just the e-mail address should be treated as plain text.

I have not tested that feature recently as mailto is not enabled (disabled) in my windows 10 however the general method in the past was to use a restrictions file
